For most of us, a low fat lunch is the best way to go. Lunch on the Go helps pack it all in-except the fat!

Ingredients

8 baby carrots
Your Favorite Fat Free Dressing
2-3 cups of romaine salad
2 oz. parboiled green beans
4 oz. canned solid white tuna, packed in water
1 tablespoon capers
6 cherry tomatoes, halved

Preparation

Place baby carrots in Side Car #1.

Place your favorite salad dressing in Side Car #2.

Mix salad ingredients together to make a delicious Nicoise Salad to enjoy at lunch.

Reserve the carrots for a quick afternoon snack and remember to drink plenty of water throughout the day!

Serves: Provides 1 snack and lunch for 1
