  1. Chipotle Chicken Sandwich

A cold sandwich that can be hot or not - you decide.

Ingredients

1/4 cup sweet corn kernels
3/4 cup shredded cooked chicken
1/2 cup diced red peppers
2 tbsp. chopped fresh cilantro
2 tbsp. chopped green onions
4 tsp. lime juice
Dash Tabasco® chipotle sauce (optional)
2 tsp. fat free mayonnaise
8 slices oat bread

Preparation

1. Place corn in a mixing bowl. Add cooked chicken, diced red peppers, cilantro, green onion, lime juice and chipotle sauce. Toss to blend.

2. Add the low fat mayonnaise and season with salt and pepper.

3. Divide filling among 4 slices of bread. Top with remaining slices of bread.
