Ingredients

1 1/2 tablespoons olive oil
1/2 cup chopped green onions
3/4 pound carrots, peeled and sliced
4 cups chicken bullion
1/2 tablespoon curry powder
1/2 ripe banana
1/2 cup coconut milk
1/2 cup low fat sour cream
6 blades fresh chives, cut into 1-inch pieces
Salt & Pepper

Preparation

A wonderful summertime treat!

In medium sized pot, add olive oil, onions and carrots and saute for 5 minutes. Add chicken bullion, curry powder, and a pinch of salt and pepper. Bring to a boil, cover and simmer until carrots are nice and tender, about 15 minutes. Add banana and coconut milk for a taste of the tropics! Blend with a hand blender or in a food processor. Process until soup is smooth and carrots are fully pureed. Add a pinch of salt and pepper to taste. Chill until ready to serve. Garnish with a spoonful of sour cream and chives when serving.
