  1. Chilled Chipotle Tomato and Basil Soup

Ingredients

4 red plum tomatoes, sliced into four
1/4 cup olive oil
1 teaspoon honey
2 teaspoons minced garlic
1 tablespoon chopped basil
3/4 cup chicken stock
2 dashes of Tabasco chipotle sauce

Preparation

Preheat oven to 300°F.

Brush tomato slices with oil, bake in oven for 20 minutes.

Place tomatoes in blender with honey, garlic, basil and chicken stock and process until smooth.

Add a couple dashes of chipotle sauce and blend to mix. Taste for salt and pepper.

Chill until ready to serve.
